Preheat oven to 180°c.
Scoop a little of the avocado out of the center to allow enough room for the egg. Place avo into a muffin pan for stability then crack an egg into each half. Cook for about 10 minutes or until your personal preference.
While you wait get your toast ready.
Serve on a bed of rocket and top with Avo Smash Dukkah and Lime Pepper Grinder Salt.
