Preheat oven to 190 degrees and prepare to baking trays with baking paper.
In a bowl, mix together flour, cream of tartar, baking soda, Cookies & Crumble Baking Spice and salt. Set aside.
In a separate bowl, using an electric or hand held mixer, cream together sugar and butter. Add eggs and vanilla and mix until all combined, fluffy and creamy.
Add dry ingredients and mix well until a thick dough has formed.
Shape dough into 2.5 cm round balls then roll in the cinnamon sugar.
Place 5cm apart on baking paper and bake for 8 minutes or until lightly gold. Let cool before devouring!
