2kg high quality corned beef, with a thick fat cap
1 Tbsp brown sugar
2 Tbsp liquid smoke (optional)
2 Tbsp Tweed Real Food BBQ Master Rub
Combine BBQ Master Rub and brown sugar in a spice grinder. Grind to a fine powder.
Rub the spice mixture onto both sides of the brisket, covering it completely.
Mix boiling water and liquid smoke together in a shallow dish.
