Maple Bourbon Onion Relish
1/3 cup Tweed Real Food Bourbon Maple Splash Balsamic Vinegar
2½ Tbsp Olive Oil
2 garlic cloves, finely chopped
4 sprigs of thyme, leaves picked
finely grated rind of 1 lemon
1 large red onion, thinly sliced
¼ teaspoon salt
¼ teaspoon pepper
1/3 cup water
Combine vinegar, oil, garlic, thyme leaves, lemon rind, salt, pepper and water in saucepan and whisk to combine.
Add in red onion and bring mixture to a simmer over a medium heat.
Simmer until onion is softened and liquid has reduced.
Remove from heat and allow to cool.
Store in a sterilized jar in the fridge.
