Tweed Real Food
2½ Tbsp Olive Oil
2 garlic cloves, finely chopped
4 sprigs of thyme, leaves picked
Finely grated rind of 1 lemon
4 large red onion, thinly sliced
1/3 cup water
2 Tsp Tweed Real Food Wild Porcini Salt
Combine vinegar, oil, garlic, thyme leaves, lemon rind, Wild Porcini Salt and water in saucepan and whisk to combine.
Add in red onion and bring mixture to a simmer over a medium heat. Simmer until onion is softened and liquid has reduced.
Remove from heat and allow to cool. Store in a sterilized jar in the fridge.
