1/2 Tsp Tweed Real Food Wild Porcini Salt
1/2 Tsp sugar
1/2 Tsp active dry yeast
1 Tsp olive oil
2 Tbsp chopped fresh dill
In a large bowl, mix together the flour, Wild Porcini Salt, sugar, and yeast.
Add the warm water and olive oil, and mix until the dough comes together.
Knead the dough on a lightly floured surface for about 5 minutes, or until smooth and elastic.
Place the dough in a clean bowl, cover with a damp cloth, and let it rise in a warm, draft-free place for about 1 hour, or until doubled in size.
In a separate bowl, mix together the feta cheese, spinach, parsley, dill, salt, and pepper.
Divide the dough into 6 equal portions, and roll each portion into a thin, oval shape.
Spread a generous amount of the filling on one half of each oval, leaving a small border around the edge.
Fold the other half of the dough over the filling, and press the edges together to seal.
Heat a large skillet over medium-high heat, and melt a small amount of butter or oil in the skillet.
Place the filled dough in the skillet, and cook for 2-3 minutes on each side, or until golden brown and crispy.
Repeat with the remaining dough and filling.
Serve the Gozleme hot, with a side of yogurt or lemon wedges if desired. Enjoy!
