Durban Earth Curry Triangle Puffs

Ingredients
250g potatoes, peeled, diced.
½ cup frozen baby peas
2-3 sheets puff pastry
1 egg, whisked lightly

2-3 Tsp Tweed Real Food Durban Earth Rub
1 Tbsp butter (optional)
Directions
Preheat oven to 200/180 fan forced
Remove 3 sheets of puff pastry from freezer, let it thaw.
Boil potatoes for 10mins till just cooked. Add peas and cook for a further minute, then drain water. Add Durban Earth Rub, butter and mash roughly (just to break down potato & peas a little).
Cut sheets of pastry into ¼’s, if you want them smaller cut them in half again. Place potato mixture on pastry and fold in half. Press loose edges with a fork and brush with egg.
Place on lined tray and bake for 15 minutes or until golden brown.
Serve with a good chutney or relish.
