Ingredients
1 medium size sweet potato, peeled
2 Tbsp Olive Oil

1-2 Tsp Tweed Real Food Durban Earth Curry Rub

1/2 Tsp Tweed Real Food Wild Porcini Salt
2 Tbsp Sour Cream (optional)
1/4 cup roughly chopped, roasted pine nuts (optional)
1-2 Tbsp finely chopped Parsley
Juice of 1/2 Lime or Lemon
Directions
Roughly chop sweet potato and either boil or bake until cooked through.
Mash sweet potato up; add remaining ingredients and mix thoroughly. Add roughly chopped, roasted pine nuts for some extra crunch.
Enjoy warm or cold as a spread on fresh bread. Grab some crunchy veggies, crackers or fluffy naan and dive into this delicious dip.
