Tweed Real Food
Can you imagine a better combination for a champion breakfast than poached egg, mushroom, spinach and the newest addition Tweed Real Food Traditional Maca 'n Spice Dukkah
1 Tbsp of butter or olive oil
4 medium mushrooms
Large handful of baby spinach leaves, rinsed and dried
¼ cup soft cheese; sheep’s milk feta, Meredith goats cheese or labneh (remove whatever was not used)
2 Tbsp Tweed Real Food Traditional Maca n’ Spice Dukkah
A sprinkle of Tweed Real Food Wild Porcini Salt
A drizzle of Tweed Real Food Classic Caramelised Splash Balsamic Vinegar
Create a bed of spinach leaves
Poach 2 eggs by bringing a small pot of water to the boil, add a dash of vinegar and drop eggs into the rapid boil, turn to low and remove after 3 minutes
Whilst the eggs are cooking; fry the mushrooms in a little butter or olive oil and sprinkle with Tweed Real Food Wild Porcini Salt and a drizzle of Tweed Real Food Classic Caramelised Splash Balsamic Vinegar, cook until they are soft, approx. 2-3 minutes
Add eggs atop the spinach, followed by mushrooms, soft cheese and garnish with 1 - 2 Tbsp Tweed Real Food Traditional Maca n’ Spice Dukkah
