As someone who has to be gluten-free due to having coeliac disease, I have found the delicious flavours of the balsamic vinegar options for salads also I am building up spice options making cooking for my husband and I a lot easier as empty nesters! Especially found it had made it a great way to add gluten-free flavours directly to oven baked vegetable trays. I make my own gluten-free coatings using these spices… for fish, chicken and even squid tubes!! I add spices to gluten-free plain flour by putting them into a small container and then shake them well. Then I add some of this mix to cut up chicken breasts into another larger container and shake to coat the meat or fish…. No coating on my hands. I line a baking tray with cooking paper, add the meat pieces and sprinkle with extra virgin olive oil… then bake in a preheated oven… I bake the mixed vegetable tray first (paper lined tray small sized cut up vegetables( from potatoes, pumpkin , carrot, capsicum, broccoli and even those bags of pre cut fresh vegetables… sprinkle oil (and even baby spinach or chopped kale on top but cover in alfoil if you do this) bake until cooked to your liking… easy on cold days and watching footy or TV etc. it has given an option other than boiled/steamed vegetables and grilled/fried meat/mushrooms etc.
