With a crispy coating made from gluten-free breadcrumbs and Tweed Real Food Mediterranean Dukkah, these chicken tenders are sure to impress.
Simply dip the chicken in whisked eggs, coat it with the breadcrumb mixture, and fry in a pan until golden brown.

Rice bran or olive oil for shallow frying
500g chicken tenderloin fillets
2 eggs, whisked
2 cups breadcrumbs (gluten-free crumbs are suitable)
4 Tbsp Tweed Real Food Mediterranean Maca n’ Spice Dukkah
Combine breadcrumbs and Dukkah over a flat plate
Pour whisked eggs over a flat plate
Dip tenderloins into the egg and then coat with breadcrumb mixture until all coated well
In a large frypan heat oil, once hot fry tenderloins for 3 minutes on each side, or until the crumb is browning but not burning!
Rest on a paper towel to absorb excess oil before serving
