All you need is some pre cooked prawns, rocket, cherry tomatoes, avocado and the summer splash! Throw them all together and you'll have the salad of dreams.

Prawn and Mango Salad
500g cocktail prawns (pre cooked, tail off)
2 ripe mangoes, sliced and flesh removed in small pieces
300g bag of mixed lettuce leaves (rocket, radicchio & baby spinach)
2 large handfuls of cherry tomatoes, rinsed and quartered
1 - 2 ripe avocados, halved, stone removed, sliced into segments
3 Tbsp Tweed Real Food Summer Fruit Splash Balsamic Vinegar - Limited Edition
Combine all ingredients in a large bowl, simply serve and enjoy!
