2 Cups rolled oats
1/2 Cup chopped almonds
1/2 Cup chopped walnuts
1/2 Cup dried cranberries
1/2 Cup chopped dried apricots
1/4 Cup honey
1/4 Cup maple syrup
1/4 Cup coconut oil
1 Tsp vanilla extract
1/2 Tsp Tweed Real Food Cookies & Crumble Baking Blend
1/4 Tsp salt
Preheat your oven to 175°C. Line an 8-inch square baking pan with baking paper, leaving a bit of overhang on the sides.
In a large bowl, combine the oats, almonds, walnuts, cranberries, and apricots. Mix well.
In a small saucepan over medium heat, combine the honey, maple syrup, coconut oil, vanilla extract, Cookies & Crumble Baking Blend, and salt. Stir until the mixture is well combined and the coconut oil has melted.
Pour the wet ingredients over the dry ingredients and mix well to coat everything evenly.
Pour the mixture into the prepared pan and use a spatula to press it down firmly.
Bake for 20-25 minutes or until the edges are golden brown.
Remove from the oven and let cool in the pan for 10 minutes. Then, lift the baking paper to remove the granola bar from the pan and transfer it to a wire rack to cool completely.
Once cooled, cut the granola bar into desired sizes and store in an airtight container for up to 2 weeks.
