Tweed Real Food
500g chicken mince
Half cup breadcrumbs
1 large egg
1 brown onion
2 Tbsp sweet chilli sauce
Juice of half a lemon
*You can add more vegetables if you wish, such as grated zucchini and very finely chopped celery. For best results squeeze the moisture out of vegetable prior to combining them with the chicken mixture.
Preheat oven to 180 degrees.
Combine chicken, bread crumbs, sweet chilli sauce and BBQ Master Rub in a bowl.
Using a food processor, if you have one; Process the onion and carrot to very fine, alternatively cut or grate very fine.
Combine the chicken, egg, vegetables, lemon juice and Chicken & Chips Salt very well using your hands.
Form mixture into a loaf shape, pressing it firmly to remove air. Place in a lightly greased loaf baking pan and give it a tap on the bench to help remove any more air bubbles. Cover with foil and bake for 60 minutes.
Remove foil and bake for a further 20 minutes.
Slice and serve.
