Preheat oven to 200 degrees
Cut sweet potatoes into sticks 1.5cm wide and approx 8 cm long.
Toss the sweet potatoes in olive oil as evenly as possible and then in the Garlic Rosemary Rub.
Cover 2 flat baking trays with baking paper and spread sweet potatoes evenly.
Bake for approx 15 minutes on one side, then turn and cook for a further 10 minutes.
