Simple Stuffed Capsicums
- 1 Tbsp extra virgin olive oil
- 1 brown onion, diced
- 5 capsicum / peppers, halved lengthways, seeds & inner stem removed
- 2 garlic cloves, minced
- 1 400g tin of diced tomatoes
Preheat oven to 190 degrees
Meanwhile. heat olive oil in a large frypan over medium-high heat, add onion and cook for 5 minutes.
Add garlic, Tweed Real Food Smokey Cue Rub and cook for 1 minute until fragrant.
Add beef mince and fry until browned.
Add tomato tin, tomato paste and cook for a further 5 minutes, maximum.
Line baking tray with capsicums, hollow side face up.
Sprinkle with a light layer of mozzarella.
Fill with mince mixture and top with mozzarella, pushing the cheese down into the mince mixture a little so it is not only on the top.
Cover tightly with foil, bake 45 minutes.
