Quinoa Mexican Style Salad
INGREDIENTS- 1 cup quinoa, cooked as per packet instructions
- 1 ripe avocado, halved sliced into small cubes
- 200g corn kernels, fresh or tinned
- 200g kidney beans or black beans, soaked overnight or tinned
- 1/2 cup fresh coriander, freshly chopped
- 1/2 cup sundried or semidried tomatoes, roughly chopped
- Juice of 1 lemon or lime
- 2 Tbsp
