Mexi Fresh Nacho Salad
INGREDIENTS
- 3 Ingredient Crispy Pita Chips Or Packet of store-bought Corn Chips
- 1 x 400g tin of kidney beans (rinsed and strained)
- 1 x 400g tin of corn kernels (rinsed and strained)
- 2 x ripe avocados, sliced and scooped
- 1 punnet of cherry tomatoes, rinsed & quartered
- 1 small/medium red capsicum, seeded and diced
- 1 medium-sized red onion, diced
- 1 cup of iceberg or cos lettuce, rinsed and chopped roughly
- 1.5 Tbsp Tweed Real Food Fiesta Mexicana Seasoning
- 2 limes, juiced
- 1/2 cup of fresh coriander, chopped roughly, stems included
METHOD
Combine all ingredients in a bowl
Place corn chips around the bowl
If you are a fan of sour cream add a generous dollop onto each serving
