Louisiana BBQ tomato sauce
100ml olive oil
250g cherry tomatoes
2tbsp apple cider vinegar (for a richer flavour substitute with Tweed Real Food Bourbon Maple Splash)
Heat 2tbsp olive oil in a fry pan over high heat.
Add tomatoes and fry, tossing occasionally until softened and slightly scorched. Add the remaining ingredients, blend until smooth or until consistency you desire.
Perfect as a marinade for beef or serve as a dipping sauce for seafood.
