Louisiana BBQ Roast Beef
1.5kg Bolar Blade (or similar)
3Tbsp seeded mustard
Mix seeded mustard and Tweed Real Food Louisiana BBQ together, rub onto blade, pour over balsamic and cover, allow to rest for 2-48hours in fridge.
In a stove top to oven safe pan, place blade into pan with a small amount of olive oil and brown on each side.
Once browned, transfer to 160 oven or BBQ and cooked to your desired doneness.
Make a sensational mushroom gravy with the juices.
Mix juices with 250g sliced mushrooms and stir till slightly softened.
Add ½ Tbsp Tweed Real Food Bourbon Maple Splash Balsamic and 1/2tsp Tweed Real Food Porcini Salt.
To 2Tbsp warm water add cornflour and add to juices.
Mix, add more water if needed to have your desired thickness.
Serve with vegetables and Roast Beef.
