Zucchini Fritters dreaming of Green
3 medium zucchini spiralized
100g feta, crumbled
12 brussel sprouts, chopped in half
Olive Oil for cooking
1 fresh Lime
On a flat pan, heat with a little olive oil.
Add 4 portions of zucchini to pan, top with some of the crumbled feta and Lime Pepper.
Add brussel sprouts to pan and cook at the same time.
Flip and repeat with the zucchini.
While the fritters are cooking, cook or poach eggs.
Smash avocado in shells with a little fresh lime juice, Lime Pepper & Avo Smash.
Plate and drizzle with Bourbon Maple Balsamic. Eating healthy never tasted so good.
