Curry Triangle Puffs
250g potatoes, peeled, diced.
½ cup frozen baby peas
2-3 sheets puff pastry
1 egg, whisked lightly
2-3tsp Tweed Real Food Durban Earth Rub
1tbsp butter (optional)
Preheat oven to 200/180 fan forced
Remove 2-3 sheets of puff pastry from freezer.
Want pastry to be just thawed.
Boil potato for 10mins till just cooked.
Add peas and cook for a further minute.
Add Tweed Real Food Durban Earth Rub and butter and mash roughly. (just to break down potato & peas a little)
Cut sheets of pastry into ¼’s – half then half again. (for a smaller curry triangle cut the square into 2 triangles)
Place potato mixture on pastry, fold in half.
Press loose edges with a fork and brush with egg.
Place on lined tray and bake till golden brown.
Serve with a good chutney or relish.
