Creamy Tuscan Salmon
1 cup cherry tomatoes, halved
1 1/2 Tbsp Olive Oil
4 skinless salmon fillets
1 brown onion, finely chopped
300ml cooking cream
100g baby spinach
fresh basil leaves and crusty bread, to serve
2-3 Tbsp Tweed Real Food Viva Italia Dukkah
Heat half the oil in a large frying pan over medium-high heat. Cook the salmon for one minute each side or until golden. Transfer to a plate.
Heat the remaining oil in the same pan over medium-high heat. Cook the onion until softened. Add the cream, Viva Italia Dukkah and 1/3 cup water. Bring to the boil.
Return the salmon to the pan. Add the tomatoes and spinach. Reduce heat and simmer for 3 minutes or until salmon is almost cooked through.
Serve with fresh basil leaves and crusty bread. Enjoy!
