Chicken and Vegetable Skewers
INGREDIENTS
- Skewers (wooden or metal)
- 3 chicken breasts, cubed
- 1 red onion
- 1 brown onion
- 2 capsicums, colour of your choice
- 2 zucchinis
- 2 Tbsp olive oil
- 1 Tbsp Tweed Real Food Chicken and Chips Salt
METHOD
Lightly whisk the olive oil and Chicken and Chips Salt.
Slice chicken and vegetables into 1-inch (2.5cm) cubes or slices.
Combine together coating the chicken and vegetables evenly.
Refrigerate to marinate, whilst soaking the skewers in water for a minimum of 30 minutes.
Thread chicken and vegetables onto the skewers.
Preheat grill, BBQ or grill pan to medium heat.
Cook for 5 - 7 minutes on each side until chicken is cooked through and vegetables browned.
TIP
Vegan version - replace chicken for tofu.
Vegetarian version - replace chicken for tofu & haloumi.
