- 2 Tbsp extra virgin olive oil
Combine all ingredients excluding oil and breadcrumbs.
Once well combined, all breadcrumbs to make a less moist and more solid mixture.
Using the palm of your hand, create balls that snuggly fit into your palms when cupped together.
Roll mixture into balls and slightly flatten, lightly clapping out any air to make them solid.
Using a frypan over medium heat, heat oil and cook. turning after 4 minutes.
Both sides should be browned and the juices running clear.
